Easy Mediterranean Orzo Salad with feta, crunchy cucumbers, and a zesty lemon dressing. One of my favorite healthy dishes for meal prep! It’s even better the next day!

Orzo Salad Recipe ingredients
- 16 oz Good & Gather Signature Orzo
- 1 English cucumber
- 3 oz Good & Gather Feta cheese
- 3-4 Good & Gather sun dried tomato halves
- Juice of 1 lemon
- 1/4 cup olive oil
- Salt and pepper to taste

How to make Orzo Salad
- Salt and boil water for the orzo; cook according to package directions. Drain and cool.
- Dice the cucumber and sundried tomatoes and combine with the feta and any other add ins (make this recipe yours! It’s so easy to customize!)
- Toss with cooled orzo pasta (it doesn’t have to be completely cold, just not warm enough to melt the feta).
- Whisk together juice of one lemon, the olive oil, and salt and pepper to taste. Pour over tossed salad and toss again.
- ENJOY
Mediterranean Greek Orzo Salad variations
This recipe is so easy to customize! Add in any of your favorites, like:
- Chopped Basil
- Fresh spinach
- Shredded rotisserie chicken
- Diced bell peppers
- Sliced Kalamata olives
- Chopped artichoke hearts
- Or whatever your heart desires!
How to store leftover Greek Orzo Salad
Put leftovers in food safe container and store in the refrigerator for 5 days.
Mediterranean Orzo Salad Meal Prep
Truth be told, this salad is even better the next day! No need to reheat! To meal prep, simply divide the salad into your meal prep containers and store in the refrigerator for up to 5 days. Voila! That’s it!
